A good champagne copy and, indeed, some drinkers will prefer the more fruit-driven flavours. This shows good yeasty, buttered toast characters, too. Champagne grapes (Chardonnay, Pinot Noir and Pinot Meunier) are used in a similar production process. However, even when the grapes are sourced from the cool climate vineyards of Tasmania, they will always have an added fruity edge over the ones from Champagne.
