Vilmart is a tiny house owning 11 hectares of Premier Cru vineyard on the Montagne de Reims. The Vieille Réserve is barrel fermented and left in cask for 7-10 months before the wine is turned into champagne. The blend is 70% pinot noir and 30% chardonnay, getting two years of lees ageing before release. It is a rich, full-bodied style of champagne, showing classic pinot smells and flavours of summer fruit salad, with buttery development from age. A real wine trade secret.
